Vietnamese Phin Filter
We recommend using a stainless steel Phin. Make sure it has a screw down filter press in the brewing chamber (some do not).
1. Grind coffee very fine, finer than drip but just a little coarser than espresso.
2. Fill the chamber 1/3 to 1/2 full with coffee. Add a small splash of hot water to wet the grounds.
3. Screw down the top filter onto the bed of coffee. We recommend screwing down tightly - it will take longer to drip, but this improves the flavor considerably.
4. Place the Phin over a coffee cup.
5. Pour water (just off the boil) into the chamber and put the lid on top.
6. Wait. It may take 2-3 minutes before the coffee starts dripping into the cup.
7. Check water level in the chamber after 6-8 minutes. When it's finished brewing there will be no water left.
8. Serve black, with a little sugar, or Vietnamese style with condensed milk. Enjoy!
